Special Select Late Harvest wines (known in Germany as Beerenauslese or Trockenbeerenauslese) have a minimum sugar at harvest of 35.0 Brix. The residual sugar is usually over 15.0% by weight. These wines are made from fruit totally affected with Botrytis, some berries fully raisined.
