Grappa is a distilled spirit made from pomace, the compacted mass of grape skins, seeds, and stems left in the press when the juice has been extracted. The pomace is mixed with water and fermented into a “wash” that is subsequently distilled. Grappa is closely related to the French “marc” and German “testerbranntwein.”
