Had this last night with a simple meal of tilapia, green beans (Watermans style) and Eastern Shore tomatoes. A little more full throtled than the '03 with deeper, richer flavors and just a hint of cola. Very, very nice on it's own but not a good pairing with the fish. 13.5% Alc/vol. A very good deal at $9.99.


Green Beans a'la Waterman's

Start with chicken stock enough to almost cover the beans. Add 1/2 stick of butter. Add between 6 to 8 whole peeled and crushed garlic cloves into the stock and bring it to a boil. Remember, garlic gets sweet as it cooks in liquid. Put in the cleaned and trimmed green beans. I cook more than a pound. Add salt and pepper. Simmer them at least one hour. Stir occasionally. I think the secret is that the longer it cooks the more mellow the garlic becomes and the more the flavors meld together. This works well with mature beans. Sometimes I remove the beans and reduce the liquid to concentrate the flavor and then return the beans and serve. This produces a soft bean so if you like your beans with a crunch, which I do also, this recipe is not for you.
