Please suggest a wine to go with cooked penne tossed with olive oil and sliced ripe olives and broiled bell pepper slices.
I'm also looking for an easy recipe for
raspberry vinaigrette. I printed a couple off the Internet but would value one that's been tested and tasted by one of you.

as for the vinaigrette, I like to mix raspberry vinegar with cracked black pepper and olive oil, and that is all. It's in simplicity where those tastes soar.

Wonders of Wine,

How could you have missed the posting by IK for his Raspberry Vinegar dressing? Well whatever, I guess you did.

Here it is:

RASPBERRY-HAZELNUT VINAIGRETTE

3/4 c Hazelnut oil
1/4 c Raspberry vinegar
1 tsp Soy sauce
½ tsp dried chives
½ tsp dried thyme
½ tsp course ground pepper
½ tsp freshly grated nutmeg (or 1/4 tsp ground/tinned)

Mortar together the dry ingredients (or spin in a blender or processor).

Dissolve the dry ingredients in the vinegar and soy sauce. Mix well.

Combine with the oil. Shake or stir vigorously to emulsify the mixture.

Store in the refrigerator.
