Had this last night with some salmon baked two ways - one with a mayonnaise, lemon juice, Dijon mustard and dill sauce, the other with a lemon wasabi sauce. The thick sauces were put on the salmon before they went into the oven for about twelve minutes. Also had some chicken cut into nuggets and breaded with panko then sauted lightly in peanut oil. Anyway, the PN has evolved into a nicely elegant juice that wasn't anywhere near as huge as the four 2002 PN's we brought to the FL. Cherry, vanilla and black fruit on the nose; coffee, spices and black fruit in the mouth. The tannins were very graceful and nicely rounded. I think this is the Dijon clone that goes into their Pierre Leon blend. Forget the price as we got it from the Cellar Club a few years back and I don't generally keep notes on the cost. In WW's vernacular, I'd say it was a four lapper, but in a very different style than the Central Coast PN's. Last bottle, but we do have the 2000 and the 2001 to look forward to.
