Had this last night with tuna, spanish rice, and caesar salad. The tuna was seared rare with a bit of a green curry and red pepper sauce crust. The Jadot was terrific. Dark ruby color. Barnyard, cherry, and a hint of strawberry on the slightly perfumed nose. Palate was principally dark berry with a bit of stone dust or some other minerally note, medium body and moderate intensity. Mild tannins appear towards the end wrapped up in some flavor I can't put my finger on. Seems like a little core of something in there that hasn't finished unwinding. Good length on the finish. Delicious, and a fine price (for Burgundy) at twenty something a bottle.

This was supposed to be a Burgundy and salmon night, but the salmon at the fish house did not look so good. The Jadot was a bit too much for the tuna. If I try this Burgundy/tuna thing again it'll be something lighter and more minerally--maybe a village Nuits-St.-Georges.

Parker/Rovani have trashed the '93 vintage as producing overly tannic wines which, instead of resolving their tannins over time, have tended to lose their fruit and turn into tannic shells. I have had one or two '93s where that criticism could possible apply, but the vast majority have been excellent, balanced wines, showing good fruit and terroir. They seem to me to be evolving nicely.
