Do you do what most American restaurants want you to do, and eat your salad before dinner? Bye. However, if you eat it with or after dinner like you should, wine can be a problem. Sure, you can get a high acid wine, and it will go with the salad. This even includes red wine with red meat, e.g. a big barbera.

We found another alternative. Bulk up the salad. The secret is avocados. There seems to be a bunch of these, both organic and inorganic, around these days. Perfectly ripe and buttery, they even go with lo-carb diets. Just add them, sliced up small, to your salad. They neutralize a lot of the acid in the salad. You can even wash it down with the last of your Friuli Merlot.

Okay, IK. You are right on. However, how do you manage to stay thin?

Avocado is not the fruit of low-fat lovers. It is very high on the list of fat containing foods.

Might I attempt to answer my own question: You did say "small pieces............"

You are from Maine. And I know you travel, but please tell us more about how you learned that the salad does not have to come before the meal. I like my salad with or even (gasp) after the main course.

But then agan, I also like good balsamico...... as an after dinner drink to relax the digestive sysem...... so that might qualify me as a person off "the beaten track".

An Italian saying that I think I put somewhere in my book: "salad is the broom of the stomach."

In my family, we ate salad after the main course.
