Rioja.... or Dos Equis Amber.... Garnacha, Tempranillo..... a southern Rhone doesn't work as well IMHO due to their addition of Syrah in the blend (which is fine for bbq but not so much for Mexican). And would avoid any new style Spanish red that contains Cabernet.... just doesn't work with TexMex.
