My wife decided she would like a nice dinner for her birthday. Well, I have several wines that would be nice.

I am thinking about the 98 Rosemount GSM with some lamb. But the gsm may not be her style.

Another option is a 1999 Louis Jadot Puilly-fuisse.

Another option is a 1998 Tokay Pinot Gris (old vines).

Any suggestions would be welcome for couplings with these or a some wine easy to find and some great food combo you've had lately. Thanks

Actually, I had a change of heart. I have a 1997 Jadot Gevrey Chambertin that is aiching to be opened. Plus, my wife has been drooling over some salmon at the store. What are some good salmon recipes with some side dishes?

At the risk of sounding unimaginative, I prefer to broil or grill my salmon plainly with a little oil, salt, and pepper. Fruit, teriyaki, and ginger glazes can be good, but I think salmon goes best with pinot noir/Burgundy without these treatments.

I used to work at a place that did an orange/teriyaki salmon. I think it goes something like this. Start with an orange. Remove the rind. Peel the orange (i.e. remove the thin layer of white spongey stuff). Slice out the sections, taking only the pulp. Put each piece of salmon on a piece of foil. Arrange three or four pieces of orange on top. Squeeze the rest of the orange (the skin that divides the sections) over the top. Add a little teriyaki. Fold the foil into packets. You want about 1/4 to 1/2 cup of liquid in each packet. Use another orange or orange juice if necessary. Grill, broil, or bake until the salmon is done. Unwrap and enjoy.

I like to take the stuff and pull out the pin bones, pat it and prick it and coat it with a bit of olive oil and pepper and then grill it over a relatively high heat.

Seared on the outside, a bit around rare on the inside.

Yum........... I do this with Tuna also.....
