Is it OK to "unchill" a bottle of white? I put too many bottles in for a dinner party last night, and would now like the room in my fridge back? Can I take them out, or will that ruin them?

I usually get a gripe and keep them in there. However, you can do it. Be sure to get them to next coolest place in your place. Recently someone took this advice and left them in the 80 degree kitchen, and then complained when the wine was ruined.
