Hi, I am making a cheese fondue this weekend. I am making it with a dry white wine and I need a recommendation as to what wine to use.

I'm also having a filet of beef with my cheese fondue, the fondue will be paired with brocoli, new potatoes and french bread. I'm also having stuffed sausage mushrooms and chocolate covered straberries.

So my 2 questions are:

1. What Dry white wine to use for my fondue.
2. Should I serve the food with the same white wine I made my fondue or since i have beef should I include a red wine?

Your recomendations will be greatly appreciated.

Thanks

ANGIE

Hi Angie, and welcome to the Wine Board. We like to make and drink with fondue with a nice Neuchatel. Having no idea where you live, we have no idea what wine resources you have access to. Having said that, if can't find it or any other nice Swiss white, drink the same with you make it with.

For the beef filet et al, look for a Swiss Blauburgunder or a French Red Burgundy, or a New World Pinot Noir.

Hi, Thanks for your response, I live in Ft Lauderdale, Florida. So what wine would you suggest. I believe I have a Chardonay and Pinot grigio at home. Which one do u think would be better?

Thanks again. I love this forum

Chardonnay might be too oaky and get in the way of the cheese mixture. Pinot Grigio is probably a safer bet of the two.

Unless it is Ecco Domani PG. That has oak in it.
