For a dinner with different entree offerings -
stuffed cornish game hen and wasabi crusted tuna - what would be appropriate red and white wines? I realize that whites such as pinot noir or gertwurztraimer are best but would like to provide a red wine for those guests who simply prefer red.

I have heard that a good bubbly is good with sushi. Sushi comes with wasabi. Don't know if this makes sense.

Hi Tarry and welcome to the Wine Board. Pinot Noir is a red wine and an appropriate one. The Gewurtz would work too, but I think a Riesling would go better; say a German Rheingau Riesling Kabinett.

also - are cabs completely wrong for the entrees (in lieu of pinot noir)?

Yes, cabs are wrong. I prefer Washington reislings over Calfornia.

You might also try a nice red zinfandel with the chicken, but pinot noir is the best bet.

If you want a good alternative to the Pinot, we had a rich chicken dish just last night and enjoyed a Spanish Garnacha with it.

Pinot Gris/Grigio may be what you were thinking of as a white wine instead of Pinot Noir? I will let the more educated than I say if it pairs with your meal.
