I don't drink sparkling wine much. I do drink a lot of white wines, but not very cold (more flavorful this way). But you're suppose to drink sparkling wine very cold. Why is that? Wouldn't drinking it real cold makes the wine less enjoyable? I mean in a sense that you'd detect less of its flavors. Any comment is appreciated.

Hi Cmike aand a belated welcome to the board. The cold helps preserve the bubbles. I've had some sparklers that were too warm and and believe me it doesn't enhance the flavours. WW

The cold also masks the fact that sparkling wine is highly acidic, which is why when the bubbles dissipate from warming the wine tastes horrible--I think I have just described every wedding I've ever been to!

Those stupid flat glasses also help the bubbles dissipate fast even if the wine is cold.

Is about the bubbles and the acidity - totally make sense. BTW, WW, you either go to bed real late or you get up real early. Thanks for the info.

WW has already finished his 4 mile walk by that time, and getting ready to open his breakfast bubbly.
