In my work I have had an inceasing number of people requsting me to pair sparking wine with their entrrees, I have never considered this because I have always thought sparking wine is for dessert or on its own. Are there any guidlines in this area?

Hi Char, and welcome to the Wine Board. You can match almost any food with bubbly from appetizers to entrees. My favorite entree with fizz is baked Brie en cruste.

Sparkling wines are made in many different styles, and at least one will go with any food. Sounds like you work at a restaurant. See if you can get the people who supply the wine to come in with their whole range of bubblies and have them match them to your menu.

While checking into bubblies at lower price points, be sure to bug (gently) your suppliers for the Italian Proseccos and Franciacortas. Prosecco is a native grape that produces wonderfully delicate dry or off-dry wines that work with all kinds of food. The Franciacortas are usually bigger and may even be made with Chardonnay, these days, but the best ones, like Ferrari and Bellavista, can compare favorably to any very good Champagne - for less $$.

For real bargains, check the bright, fresh Spanish Cavas. Great food wines at tiny prices!
