What is a good sherry, and should sherry be chilled prior to drinking.

The whole line from Lustau is excellent from Fino (dry) to Oloroso (sweet) and in between. Chilling is optional; we do. Most sherrys will keep for awhile with simple recorking in the fridge. Exception is the Finos. Because of the way they are made, they are more unstable than table wine. If you pop one, drink it up.
