Would not start a collection in your wonderful country without a temperature controlled system. You can't go underground too far, I know, and the weather as you mention is hot and humid. An alternative would be to find a good source of wines locally, and buy a case at a time. Sore for a short time in the coolest place you have, but not in the refrigerator unless that is the only recourse. You should have good access to the fine wines of Australia. Start with medium to low price Cabernet Sauvignon, Shiraz, Chardonnay, and Sauvignon Blanc from Lindeman's, Jacobs Creek, and others. Good luck.
