You are in an excellent area. Believe it or not there are some excellent wineries in central and southern IL. One characteric of most Heartland wineries is that they tend to produce both dry and off dry wines, both red and white. The off dry reds are not commonly produced in other areas. Look up Illinois Wines on a search engine. Their association has a nice map of the region with contact information for the wineries. Try to find one that produces both dry and semi-sweet wines. Being able to taste both in one place will be educational for you.
