Savannah, welcome. Wine.com, which is now Evineyard.com, is a large online wine retailer who posts a monthly "Top Ten" list of the most popular wines they sell. Go to: http://www.avanthost.com/channels/wine/ to see the list. Personally though I don't know how market true their list is, and if it is, can you apply it to your non-E based retail sites like your store. As you know...what's in at your neck of the woods is out in mine.
Also you have to consider the general wine consumer market and the wine geek market, which are two distinct markets. As to storage scroll down to Storage/Cellars/Racking at the bottom of the categories and you'll find a lot of info on proper storage.
