Chablis is not always a safe bet for no oak. Some are pretty heavy in fact, but this trend is lessening. Try Alsace or Germany for safe bets. Loire valley is also a good place. Red wines are going to be very hard to find in no oak category. Callaway is a great suggestion as they even produce some no oak reds, but whites are their forte. Kim Crawford from NZ also makes a no oak chard.
Chard is always going to be the hardest white to find sans oak, especially from the New World.
