There are a few different Madeira wines, all are produced from white grapes (I think, however, a red grape grows on the island).

Having no idea how the restaurant did the sauce all I can tell you is what I do to make a Madeira sauce for meats.

chop a shallot and give it a minute in olive oil

chop a garlic clove, add it to the shallot and cook another minute

turn up flame and deglaze pan with a little Madeira, then add the rest of the wine (volume as needed) plus a dash of salt-free soy sauce, and chicken stock (volume as needed)

simmer a few minutes and then pour 2 ounces of Madeira from the bottle into a measuring cup, add a tablespoon full of flour, stir until the flour dissolves and pour it into the simmer and stir.

simmer until the sauce thickens; if you need more flour do another round

This is a rough recipe, 'cause that is how I cook...
