Which wine with this penne dish?

How could you have missed the posting by IK for his Raspberry Vinegar dressing? Well whatever, I guess you did.

Here it is:

RASPBERRY-HAZELNUT VINAIGRETTE

3/4 c Hazelnut oil
1/4 c Raspberry vinegar
1 tsp Soy sauce
½ tsp dried chives
½ tsp dried thyme
½ tsp course ground pepper
½ tsp freshly grated nutmeg (or 1/4 tsp ground/tinned)

Mortar together the dry ingredients (or spin in a blender or processor).

Dissolve the dry ingredients in the vinegar and soy sauce. Mix well.

Combine with the oil. Shake or stir vigorously to emulsify the mixture.

Store in the refrigerator.
