Pork and a solid riesling would be a good match, since the Germans and Alsatians grow the best and most complex riesling in the world and eat a lot of pork. A simple rielsing, though, would be overpowered by the brown gravey and probably the fried (as breaded chops often are) chops. A good spatlese level German riesling or an Alsatian may work, but I prefer IK's suggestion of a nice Pinot Noir. Another one to look for is Joseph Drouhin's Laforet Pinot Noir. It is also around 10 bucks and darn good.
