A very informative post Tasty. Sounds likw you've done some lenghty studies in the chemical field. I , like you, enjoy the bell pepper or herbacious flavor profile in my Cabs and Bordeauxs as long as it is in the background. I didn't mean to imply that early picking was the only reason for this flavor component to rear its' ugly snout but that because of the unpreditability of the weather in Bordeaux in October the estates will pick early if the threat of rains loom on the immediate future.
