My (now far) better half picked these up for me over the weekend just to be nice. Of course, that means foot rubs, cooking dinner, etc. are in my immediate future as partial recompense.

I am generally familiar with the producers, particularly the first two, but I'm just starting to move into Cab/Bordeaux land, likely due to WW's quiet board influence over the past several years, so I'm less familiar with rough aging guidelines by producer than I am with, say, Rioja. If they were yours, how long would you let them sit? Also, if one was to be opened in the near future to share as a "thank you," which should it be and with what cheese would you pair it with?
