Calon-Segur

I have recently purchased a vertical selection of Calon-Segur 1985,88,89,90,95,96 and plan to host a dinner party. I am interested in wine notes from others and menu sugestions. I think all these could stay in the celler for several more years, espically the 95 and 96, but I am willing to give them up for the dinner party. My concept is to purchase a locally raised lamb and smoke a leg with rosemary and qarlic much as we did several years ago ( we enjoyed that with several aged bottles of Jordan Cabernet ). Any comments?
