If the sauce isn't sweet -- basically, natural juices -- it's hard to go wrong with a Cabernet Sauvignon or Bordeaux.

If the sauce is sweet -- like a Port sauce or finished with Madeira -- then, yes, stick to a Syrah based wine (especially Shiraz from Australia) which has sweet, fragrant fruit tones in the aroma and flavor (although these reds are dry).
