Hi Angie, and welcome to the Wine Board. We like to make and drink with fondue with a nice Neuchatel. Having no idea where you live, we have no idea what wine resources you have access to. Having said that, if can't find it or any other nice Swiss white, drink the same with you make it with.

For the beef filet et al, look for a Swiss Blauburgunder or a French Red Burgundy, or a New World Pinot Noir.
