Can someone explain "Tornados" in this dish to me? It originally means "twister, violent wind" and does it imply style of cooking chicken? And why? What kind of wine should go with it?

Ciao!

The spelling is different, Cabsauv. Tournedos usually refers to a small filet of beef cut from the tip of the tenderloin. I would guess that chicken tournedos could be a dish where a chicken breast is cut into small "filets" across the grain. Would have to know flavorings and sauce type of your dish for wine pairings.

Hi Drew

Thank you so much for the correction and help. Really appreciate it.

Chef prepares the chicken breast wrapped in bacon served with grilled vegetables and chessy mushroom sauce.

One more time, thanks again.

For reds would recommend a nice earthy Pinot Noir, maybe from Oregon, or a Cotes du Rhone, with primarily Grenache in the blend. Also might try an Aussie Grenache (Yalumba Old Vines). For whites I think there's a lot of options as you have a lot going on with your dish. Sancerre, white Cotes du Rhone or Gewurtztraminer would be my picks.
