Welcome to the board fellow Tar Heel.

Several wine sites on the Internet have normal pairings. You can also check back on this thread to see recommendations. Generally consumers go with white wines for delicate fish or chicken dishes and maybe pork and veal and red wines with beef, lamb, or tomato-sauced pasta, pizza, etc. One exception to this is that Pinot Noir or red burgundies (made from Pinot Noir grape) goes nicely with salmon. Some like Beaujolais or Zinfandel with turkey. In the end, try combinations and see what you like best. You may find you prefer a white wine such as a German Rieling Spatlese to a more tannic red wine and, if so, feel free to drink white wine with any meal.
Most whites should be served slightly chilled and most reds at about 65 degrees F.
If the red has been out in a room with thermostat at 74 or so, you may want to put it in an ice bucket for a few minutes before drinking it.
