I'm doing a wine and dinner matching tonight for a friend. The rest of the menu is okay but these two?? I've got no clue...

Soup
White Bean Soup with Wild Mushroom & Chive Mascarpone (asusming that white bean is dominant versus mushroomm....but only a guess)

Salad.
Arugula, Mint and Apple Salad with Walnuts & Buttermilk Dressing

With the soup, a CDP or a really big CDR.

With the salad, that oaky Chard you don't know what to do with.
