Help!
I am having a small group of 4 couples over for hors'douvers. What wine should I have available. We will be having dinner out.
Hors'douvers served:
warm crab cakes,
chilled shrimp,
smoked salmon,
cheese,
crackers.
Most of the men, however drink bombeii martinis, but they might have wine. What should be chilled and what should remain room temp? Thanks for the assistance.

Any ideas for a desert wine for chocolate dipped berries?

With the hors d'oeuvres would go with a well chilled California bubbly such as Roederer Estate Brut or Brut Rose'. Nothing goes better with a chocolate dessert than a Rhoney red. Try Paul Jaboulet Aine, Cotes Du Rhone, Parallele "45", or, if you want to kick it up a notch, the same producer's Crozes Hermitage, Domaine De Thalabert.

I'll defer to Innkeeper for the chocolate pairing.....

As a matter of fact I'll just plain defer to him because I was going to suggest a bubbly with the fixin's also.

I have not tried the Roederer yet.

I like Moet & Chandon Imperial Brut. I also like the Iron Horse Blanc de Blancs or Perrier-Jouet Grand Brut. I think any one of them would be fine with your choice of "horse douvers" - at least they would be for me.
