cuisinchef, welcome. I'm kind of a Shiraz nut so I like with almost anything but traditional recommendations would be:

Beef, lamb, Parmigiano, Romano and other hard cheeses. Cheddar and other savory, firm cheeses. Also check some Aussie web sites for regional recipies that would pair well with Shiraz.

Try to picture Australia a hundred years ago. What do you see? Sheep, right? Zillions and zillions of sheep. That's why they planted all those shiraz vines.

Have to agree with IK and Drew. Heck Shiraz even helps hide the fact that you might have mutton instead of lamb.

For for the sheep with that wine, for sure!!
