If I were banished to Hawaii forever I could get by if I had to with only two wines:

A great Prosecco (fizzy, not TOO dry and big fun)

Illuminati Cerasuolo Montepulciano d'Abruzzo (a full flavored, darkly colored Rosato that can pass as a light red in a pinch).

Both are inexpensive, poundable and extremely food friendly.
