CdP with veggies?

I have a '95 CdP that I'd like to open soon. I think that it would go great with something like lamb or beef tenderloin but my wife isn't much of a meat fan. Could someone suggest ideas for either a meatless entree or perhaps something using a "lighter" meat (like pork)that would still marry beautifully with the CdP?
