How do you keep Burgandy after you've opened it? Do you serve it at room temp? Is it only good for a few days in the fridge? I am enjoying Rossi Burgandy. It is very inexpensive. What are other inexpensive, but good Burgandy's? Thanks for the info.

Hi Berly, and welcome to the Wine Board. First of all Rossi Burgundy is not Burgundy. It is one of the last vestiges of generic American wines with stolen European region names. Burgundy is from France and in the red version is made from from pinot noir. It is usually very expensive as it is a small region with high demand for their wines.

Your Rossi Burgundy is made from California field grapes, and does not have a drop of pinot noir in it. If you want to move up from what you are drinking now get a inexpensive red zinfandel such as Sutter Home or Talus.

If you have a large bottle of your Rossi, keep it closed and in the fridge for up to a week. If you, in the future, buy wine in regular 750 ml bottles, try not to keep leftovers for more than a day or two.

Keeping wine after you have open it. I use plastic bottle stopper with a shot of nitogen gas. Last year I open a bottle of 1963 Quinta Do Noval vintage port in Sonoma and keep drinking it for three day with shot of nitogen each time we open it. It gave us and our friends a way to enjoy the wine over our stay. Try it some time. You can get cans of nitogen at most wine shops. Don't use the cork, the plastic bottle stopper keeps the wine from contact with the air. Ray Hom

What I think Mr. Hom is talking about is a product called "Private Preserve", a combination of nitrogen, carbon dioxide, and argon. It does work. WW
