I'm looking for pairings for a couple of lighter meals with white meat:
1)Marinated chicken served with sesame pasta on top of fresh chopped greens tossed with tomatoes, fried wontons, and honey mustard dressing
2)Turkey club sandwich on wheat

1. Gewurtztraminer.

2. Almost any white wine. A woodless Chardonnay would be nice.

I second IK's idea of Gewurtztraminer, but you could also serve a 2004 Reisling with it.
