Ideas for a dinner for four!

I am purchasing a 1998 Dry Creek Fume Blanc and I would like to know ideas for a three course meal ideal for a small group to have their first day in their new house. Any suggestions?

Start with a New England Clam Chowder. Follow with Ficelles (crepes filled with a variety of sauteed mushrooms, and baked in a cream sauce). Then serve Poached Flounder topped with herb and paprika butter, and garnished with green beans and carrots. Hope you have a least four bottles of your Fume.
