Most of your better American wines are made both Unfined and Unfiltered. Fining is done to remove the small floating particles of the skins, leaves, and stems from the liquid. The most common way is to put egg whites in the top of the barrel and as it floats to the bottom it removes these small particles. The wine is then transferred (racked ) into another barrel carefully and the sediment remains on the bottom. Filtering is done at the time the wine is prepared for bottling and this process takes all of the remaining finer particles out of the juice. Many people, me included, believe that the 2 processes strip the wine of some of its character and depth. WW
