1994 Sebastiani Cabernet Sauvignon

Prepared peppercorn encrusted grilled tuna caught 60 miles off the Delaware Bay and served with large baked spuds with sour cream, pepper and a drizzle of olive oil. Salad consisted of romaine, roasted mixed peppers, olives, mushrooms, red onions, spring onion,radish and zuccini tossed with a raspberry/vinegarette dressing. The wine was the last 94' Sebastiani I had...clear garnet with somewhat alcoholic nose mixed with black fruit and subtle sweet oak scents. This wine is almost pure fruit, just a smidgeon of oak, with blackberry and ripe plum and black cherry notes. The wine is still somewhat astringent both midpalete and finish. Seemed closed compared to the 96' which I think is more extracted/concentrated with better integrated tannins. A more plush, rich wine. The 94' pared nicely with the pepper tuna and my wife loved it all....(points for me!!!).

Did you catch that sucker yourself? If so, congratulations! That makes the eating of the catch oh so much greater; it certainly seems to taste better!!

I like to take a small portion of the fresh catch and marinate it in either soy sauce and a bit of lemon juice or in an Italian style dressing. Then, I eat it raw. Yum!!

The rest gets about the same marinade treatment and then gets grilled. I get my tuna freshly caught, but sadly I do not do any of the work. A neighbor, thank goodness for him, does that for me.

I'd really love to go out about 60 to 100 miles someday and catch some myself!!

No Mike, one of my employees is a fishing fanatic and he brings us fish often. He charters boats out of the Indian River Inlet and they fish off shore anywhere from the coast to 90 miles out. He caught the first blue marlin of the season this year off Ocean City, and was told if he had caught it during the White Marlin Tournament, and had pre-registered, that he would have won a check in the 6 figure range! The Marlin he caught weighed 750 lb. and had swallowed a 40 lb. tuna he was bringing in on line! I'll have to try marinating the next batch awaiting in the freezer.
