Picked up 3 bottles yesterday for $16 a piece. Anyone have any good food pairing suggestions?

Lamb is good. Lots of garlic I'm unsure of. Or basically I wouldn't recommend. Braised lamb shank over salt and pepper mashed potatoes with a lamb reduction sauce, I would. Use heavy cream instead of milk in the potatoes.

Something to start the dinner off with? Braised ox-tail with seared (super hot pan just enough to make the scallops crispy with keeping the scallop medium rare)dry-pack sea scallops topped with marrow (Ox-tail)butter.

Maybe something in between? How about some beef tartar (tenderloin, smoked sea salt, white pepper, cracked black pepper, mustard seed, capers, Olive oil)topped off with a couple of quail eggs (raw) over mixed field greens (dressing - mayonaise, dijon mustard, fresh basil, sea salt, cracked black pepper) very light dressing.

Sounds good to me. Especially with the '04 bin 28. Although really, this wine will age a few more years. And then, this menu will really work.

Wow, that intense...but I went to the local market and stocked up. Lamb with tons of garlic with meat on the bone is where this has taken me. Thanks!
