What wine would go best with a typical Christmas dinner (turkey, ham, stuffing, potatoes, veggies, etc.) for around $30?

A nice Volnay from Burgundy can be had for that and would go wonderfully with your Christmas dinner.

Folks on this board have heard this a hundred times from me, but we stick with our tried-and-true staple, a German Mosel-Sahr- Ruwer Riesling Spatlese. They're inexpensive (typically $10 or so) and MADE for poultry and ham. Just be sure to serve it chilled, and plan on at least a half bottle per person.
