Hi AJ and welcome to the Wine Board. This is only a guess because I don't know what the shells will be stuffed with or what sauce will be with them (thus dominating the dish). If they will be stuffed with meat and in a tomato sauce, recommend Barbera d'Asti or Chianti Classico. If you want to spring a little more, consider a Rosso di Montalcino.
