If you are using a vinaigrette salad dressing, the acidic vinegar can interfere with flavors of some wines. Sometimes I find that a Sauvignon Blanc such as St. Supery or from Sancerre, France or New Zealand goes well with appetizers and salads.

Best vinegar and wine combination I have had included a semi-dry Riesling--second best was a Madeira Verdelho.

The vinegar was balsamic.
