My favorite pasta dish from Lidia

Tonight I made my favorite pasta dish inspired by Lidia Bastianich. Brown Italian sausage in a frypan with a little olive oil, add a couple of sliced onions and a head of fennel sliced. Throw in a couple of cloves of sliced garlic. After everything is cooked, make a little "hot spot" in the fry pan and blob in about 1/2 of a small can of tomato paste. Let it cook a bit, then stir it in with the rest of the food. Cook your favorite pasta separately then mix it and a ladle full of pasta water with the sausage mixture. Finish with some hot pepper flakes and ribbons of fresh basil. MMM-MMM good and easy. Now what would be the best wine for that? We had some Trader Joe's white zin, but I'm sure one of you has a better suggestion!

Thanks, Thomas. Your suggestions sound good. I love anchovies, but hubby has recently found out that he is allergic. After eating some Caesar dressing he said, "Gee my lips are swelling and my throat feels funny." He said it had happened one other time we had that dressing and he'd never said anything! I have benedryl at the ready now.
