Was wondering how dessert wines and ice wine should be served; chilled or room temp? Also just received a bottle of Eiswein(sp?) from a friend, can anyone comment on this?
Thanks.

Welcome to the board. Ice wine and Eiswein are the same - "Eiswein" is the German spelling of this dessert wine with high residual sugar, made from the Riesling grape. Eiswein is made when the fully ripened grapes are frozen on the vine. It is difficult to make well, and therefore highly prized and expensive. Serve it well-chilled in very small quantities, either with or in place of a sweet dessert. Another dessert wine is the French Sauternes, made when botrytis ("noble rot") has set in on the ripened grapes, trapping sugar. It is also highly prized and very expensive. There are other dessert wines - port and Banyuls, for example.
