Hello and welcome to the wine board. Your question is so open ended that book after book after book has been written trying to come up with the answer.

I'd like to suggest that you browse through the forums of this board. You will get hints and suggestions and plenty of good information that will help you answer your question.

Try starting with both the "Novice" and the "Wine/Food Affinities" Forums.
