I was told to get a therometer for wine temps. Is there a type I should use?

Thank you. I just tried a Shiraz for the first time. Penfold bin #2. The taste changed more dramatically and quicker than other types I tried is that correct?

Don't quite understand your statement. Does the taste of the wine you are drinking change all the time? It really shouldn't, and certainly not "dramatically and quicker."

Sorry for sounding so new to this, but the Shiraz seamed to get bad quicker than let's say a Merlot(the taste getting sour). Cabernet seams to be more spicy than a Merlot. Shiraz seams to be dry like a Cabernet, but have a softer after taste. I just want to know if I'm the right path.

Nothing to be sorry for. Just trying to help here. Merlot is not supposed to get sour unless you are referring to the dregs in the bottom of the bottle. Try to avoid those. Shiraz or merlot are not supposed to get sour any earlier. Of the three wines, shiraz/shrah is supposed to be the spiciest. Cabernet should be fruity with notes of black current or the liquor Cassis. Merlot should be smooth and plumy.

Penfold Bin #2, Shiraz-Mourvedre 2001. It changed I think due more to temps than time. 2 days. Any comments? I really like a Merlot from Woodbridge, selected vinards clay hollow.
