I was out shopping and found the following on sale:

2003 Barton & Guestier Chateauneuf-du-Pape Syrah from southern Rhone France

2005 Chateau Ste. Michelle Chardonnary from washington state (had their rieslings, rather enjoyed them)

what I am wondering is should I age these wines or would it be best not to, if its best to how long would be best and what climate and conditions would be required?

Hi Iwine, and welcome to the Wine Board. Both of these are ready to drink now. The difference is that that CDP will improve with age, and the Chardonnay won't. Drink the Chard soon, and the CDP over the next few years. More complex (and more expensive) wines from that region, usually require considerable aging.
