I am looking for some nice wines--particularly reds--that will keep a couple of days after opening. I am the only one in the house who drinks wine, other than the cooking pot! I'm just starting to drink wine and find the usual guides too much information.

Hi Ak, and welcome to the Wine Board. Here's is the perfect little book for you to pick up or get from Amazon or their likes if you just can't pick it up: "Wine Buying Guide for Everyone", by Andrea Immer. In addition to being a pocket guide that does not go out of date (it came out in '02) because she evaluates widely distributed wines that are steady year in and year out; she has what she calls "Kitchen Countertop Survivor Guides" for red wines. This, latter, is exactly what you are looking for.

By far, the easiest way to keep wine, is with a can of Private Preserve Wine Preserve. Here is Chicago it will run approx. $8.00 and it lasts for a long time.

There are three things that wine doesn't like: Oxygen, Light and Heat. It's easy to control the latter two of the three but the first one is tough.

This is basically nitrogen in a can and although the can (in the store) will feel empty, it's not. When you spray the nitrogen into the wine it forces the oxygen out of the bottle and the nitrogen becomes an invisible layer.

This should help you keep the wines fresh until you can get around to drinking them again.
