Hello,

I have been enjoying wines for the past 15 years, preferably reds. My question is: I have a 1995 BV Cabernet Sauvignon Private Reserve Georges de Latour. Also a 1995 BV Rutherford Cabernet Sauvignon. Both have been located on a wine rack in the closet for the past 9 years. I did inquire about temp setting and found the closet to stay pretty cool between 54-57 degrees. I have also rotated the bottles regularly. Don't know if any of this helped. How long do I need to let them age? Are they ready for de-corking?

Hi Uzmati, and welcome to the Wine Board. They should be getten there. Would pop the Rutherford first some time this year or next.

Fall/winter it about 57 average. Summer its got to 60ish when hot. It is located off a garage and sits back off a coverd patio. Out of the six closets it is the coolest.

I will hold hold off until next year for the reserve as it will be my 5 year wedding anniversary and 15 years together. I think that accounts for a toast.

Uzi IMHO you should open the Rutherfdord soon. This is a fine wine I've posted on several times in the last few years and the GDL has also had lots of press from me during the same time frame. If your closet is indeed in the 55-60* range the GDL will also be at the top of its' game in another 1-3. GOOD juice. As a slight reccomendation, wine shouldn't be rotated. Once you have it in storage leave it alone. You have probably been confused with the storage of Champagne before releasing it. WW

How important is the humidity? I really have not paid much attention to this aspect.
Will this have an effect on the bottles I've been aging? Thanks

Without humidity in above the 40* range the corks will have a tendancy to dry out and let air into the bottle. Yhe wine keeps the cork wet on the inside but humidity keeps the cork wet on the outside, so it is quite important. WW
